New Food Truck Rolls into the City

There’s a new food truck hitting the streets in Thunder Bay. Gluttony opened last month, serving up inventive comfort food and globally inspired dishes, and for owner and operator Jessica Ward, the truck is fulfilling a lifelong dream.
“Ever since I was a little girl, I’ve always wanted a food truck, and I’ve been infatuated with the culinary arts,” says Ward.
With plans for a chalkboard menu that will always be changing, Gluttony will offer dishes like cauliflower pakoras, duck poutine, pulled pork mac and cheese spring rolls, jalapeno apricot turkey brie sandwiches, and birria ramen.
“The motives for the diverse dishes come from my experience working at various restaurants with different styles,” Ward says. “I enjoy travelling the world with my husband. We’ve been to over a dozen countries and enjoy trying new foods in all of them. I’ll try any food once!”
Having worked in the food industry for 12 years now, Ward is no stranger to the Thunder Bay culinary scene. “Some of my accomplishments are that I helped open El Tres, I was a sous chef at Bistro One, and then was chef de cuisine at Giorg and Bight respectively, with some breaks in between moving with my husband for his work in Detroit and North Bay.”
Although Ward is the sole owner of the food truck, she says support from friends and family has been instrumental in helping establish the business.
Looking ahead, Ward hopes the truck is only the beginning. “My goal with this food truck is to make enough money to buy property with my husband to start a farm and build a farm-to-table restaurant.”
